  • 12 oz rigatoni pasta
  • 4 oz cream cheese, softened
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 cup Velveeta, cubed
  • 1 cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • Salt & black pepper, to taste
  • 2 tbsp butter
  • 4 cloves garlic, minced

Instructions

  1. 1. Boil salted water in a large pot and cook rigatoni until al dente (10-12 minutes). Reserve 1 cup of pasta water, then drain.
  2. 2. In a skillet, heat olive oil and butter over medium-high heat. Sear chicken seasoned with Cajun seasoning until golden-brown (6-8 minutes). Remove from skillet.
  3. 3. Melt butter in the same skillet and sauté minced garlic for 30 seconds. Add heavy cream and milk; stir until warm. Incorporate cream cheese until smooth.
  4. 4. Stir in Parmesan, mozzarella, and Velveeta until melted. Adjust consistency with reserved pasta water if needed.
  5. 5. Toss rigatoni into the sauce, then return chicken to skillet or serve on top.
