  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1 (16 ounce) package rotini pasta
  • 4 cups chicken broth
  • 1 (32 ounce) block Velveeta cheese, cubed
  • 1 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • Salt to taste
  • Chopped chives (optional)

Instructions

  1. In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Add chicken pieces along with minced garlic, Cajun seasoning, paprika, and black pepper. Sear until golden brown and cooked through (about 6-8 minutes). Remove chicken from skillet and set aside.
  2. Using the same skillet, add remaining 2 tablespoons of butter. Add rotini pasta and chicken broth. Bring to a boil, then reduce heat to simmer for about 12-15 minutes until pasta is al dente and most broth is absorbed.
  3. Reduce heat to low: Add cubed Velveeta cheese and heavy cream. Stir constantly until cheese is completely melted and sauce is smooth.
  4. Return seared garlic chicken to the skillet: Stir gently to combine everything well. Add shredded cheddar cheese; stir until melted and incorporated. Season with salt to taste.
