  • 2 chicken breasts (cut into small bite-size pieces)

  • 2 cups chicken broth
  • 2 (14 ounce) cans white beans (drained)
  • 2 (4 ounce) cans mild green chilies (with juices)
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 4 ounces cream cheese (softened)
  • Salt & pepper (to taste)
  • Lime juice, avocado, cilantro, Mexican cheese blend, tortilla strips, etc.

Instructions

  1. Sauté the chopped onion in olive oil over medium heat for 5-7 minutes until translucent.
  2. Add bite-sized chicken pieces and cook until no longer pink.
  3. Stir in minced garlic and cook for 30 seconds.
  4. Pour in chicken broth, white beans, green chilies, chili powder, cumin, and oregano; bring to a boil then reduce heat to simmer for 10 minutes.
  5. Microwave cream cheese until softened, then stir into the chili mixture until well combined; cook for an additional 5 minutes.
