  • 3 large yellow onions, thinly sliced
  • 1 large sweet onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 1/2 cups low-sodium beef broth
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme (or 2 teaspoons fresh thyme)
  • 2 bay leaves
  • 2 tablespoons cornstarch + 3 tablespoons cold water (optional)
  • 2 tablespoons olive oil (for browning, optional)
  • 1 tablespoon brown sugar

Instructions

  1. Prepare onions by slicing them thinly and mincing the garlic.
  2. In the crock pot, combine butter, onions, garlic, brown sugar, and balsamic vinegar. Cook on high for 20–30 minutes until softened.
  3. Sear the chuck roast in a skillet over medium-high heat until browned on all sides.
  4. Place caramelized onions at the bottom of the crock pot, then add the roast on top. Sprinkle with thyme and bay leaves.
  5. Pour in beef broth and vinegar to cover the roast partially.
  6. Cook on low for 8–9 hours or high for 5–6 hours until fork-tender.
  7. Remove roast, thicken gravy if desired, and serve warm.
