  • 2 slices turkey bacon
  • 1 large yellow onion
  • 1 cup carrots
  • ¾ cup celery
  • 4 tsp garlic
  • 2 (15 oz) cans crushed tomatoes
  • 2 (15 oz) cans cannellini beans
  • 4 cups low sodium chicken broth
  • 16 oz ditalini pasta

Instructions

  1. In a large skillet, cook the turkey bacon over medium heat until crispy. Drain excess fat and slice into small pieces.
  2. In your slow cooker, combine the diced onion, sliced carrots, diced celery, minced garlic, crushed tomatoes, cannellini beans, chicken broth, and seasonings. Stir well to mix.
  3. Add the cooked turkey bacon to the slow cooker and stir again.
  4. Cover and cook on low for 7-8 hours or high for 4-5 hours.
  5. Thirty minutes before serving, add uncooked ditalini pasta to the pot and stir gently.
  6. Serve hot, topped with grated Parmesan cheese if desired.
