  • 1.5 – 2 lbs fresh green beans (trimmed and cut into 2–3" pieces)
  • 1.5 lbs small potatoes (halved)
  • 1 large onion (diced)
  • 1 lb chicken sausage (sliced into rounds)
  • 1/2 cup butter
  • 1 tablespoon Cajun seasoning (divided)
  • 1/2 teaspoon pepper

Instructions

  1. Place halved potatoes in the crock pot, sprinkle with pepper and half the Cajun seasoning.
  2. Add the stick of butter on top of the potatoes.
  3. Layer green beans and diced onion over the potatoes, then sprinkle with remaining Cajun seasoning.
  4. Top with sliced chicken sausage.
  5. Cover and cook on HIGH for 4 hours or LOW for 6 hours, stirring gently once every hour.
  6. Taste before serving; adjust seasoning if needed.
  7. Keep warm until ready to serve.
