  • 4 boneless skinless chicken breasts (about 2 lbs)
  • 2 cups low-sodium chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 tbsp cornstarch
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1 tbsp olive oil (optional for searing)
  • 1/4 tsp dried thyme (optional)
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Season the chicken breasts with salt, black pepper, garlic powder, onion powder, and paprika.
  2. If desired, sear the chicken in olive oil over medium heat until golden brown (optional).
  3. Place the seasoned chicken in the crockpot. In a bowl, whisk together the chicken broth and cream of chicken soup; pour over the chicken.
  4. Cover and cook on low for 6 hours or high for 3 hours until tender.
  5. About 30 minutes before serving, mix cornstarch with water until smooth and add to the crockpot to thicken the gravy.
  6. Serve hot with your choice of sides.
