  • 2 cups chicken broth
  • 1 (4 oz) can diced green chiles
  • 1 (15 oz) can cannellini beans, drained
  • 1 (15 oz) can great northern beans, drained
  • 1 cup chopped onion
  • 3 cloves minced garlic
  • 8 oz cream cheese, softened
  • Fresh cilantro, chopped
  • 2 tbsp lime juice
  • 1/2 tsp cumin
  • 1/2 tsp oregano (dried)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp chili powder

Instructions

  1. Prepare all ingredients: chop onion and mince garlic.
  2. In the slow cooker, combine chicken broth, onions, garlic, green chiles, drained beans, lime juice, cilantro, cumin, oregano, salt, black pepper, and chili powder. Stir well.
  3. Add chicken breasts/thighs to the mixture ensuring they are fully submerged.
  4. Cover and cook on low for 7 hours or high for 4 hours.
  5. After cooking, remove chicken and shred it using two forks; return shredded chicken to the crockpot and mix thoroughly.
