  • 2 tbsp Olive Oil
  • 3.5 cups Vegetable Broth
  • 1 medium Jalapeño Pepper
  • 1 cup Corn
  • 3/4 cup Dried Red Lentils
  • 15 ounces Tomato Sauce
  • 1 medium Bell Pepper
  • 3/4 cup Salsa
  • 15 ounces Black Beans
  • 15 ounces Red Beans
  • 1 tsp Smoked Paprika
  • 1 tsp Garlic Powder
  • 1/2 tsp Cumin
  • 1/4 tsp Cayenne Pepper
  • 1/2 cup Light Cream Cheese
  • Salt
  • Pepper
  • Crushed Tortilla Chips
  • Sliced Avocado
  • Sour Cream
  • Diced Jalapeños
  • Chopped Red Onion
  • Shredded Cheddar
  • Fresh Cilantro

Instructions

  1. Wash and chop all vegetables: onion, jalapeño pepper, and bell pepper.
  2. In a skillet over medium heat, heat olive oil and sauté the diced onions until translucent (about 5 minutes).
  3. Transfer sautéed onions to the crockpot along with all remaining ingredients except for toppings.
  4. Stir thoroughly to combine everything in the crockpot.
  5. Cover and cook on low for 8 hours or high for 4 hours until lentils are tender.
  6. About 30 minutes before serving, blend in light cream cheese until melted.
  7. Serve hot topped with crushed tortilla chips, sliced avocado, sour cream, diced jalapeños, chopped red onion, shredded cheddar, and fresh cilantro.
