  • 2 large chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, undrained
  • 1 can (10 oz) diced tomatoes with green chilis
  • 1 packet ranch seasoning mix
  • 8 ounces cream cheese

Instructions

  1. Spray the bottom of your slow cooker with nonstick cooking spray.
  2. Add the chicken breasts to the crockpot.
  3. Pour in the black beans, corn, diced tomatoes, ranch seasoning mix, and half a cup of water. Stir gently to combine.
  4. Place the block of cream cheese on top without stirring.
  5. Cover and cook on LOW for 6–8 hours or HIGH for 4 hours.
  6. Once cooking is complete, shred the chicken inside the crockpot using two forks.
  7. Stir until the cream cheese is fully melted and combined.
  8. Serve hot with your choice of toppings.
