  • 1 cup pitted dates, chopped
  • 2 medium apples, peeled and diced
  • 1/4 cup brown sugar (or maple syrup)
  • 1/2 cup water or apple juice
  • 1 1/2 cups rolled oats
  • 1 cup all-purpose flour (or whole wheat flour)
  • 1/2 cup brown sugar
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup unsalted butter, melted (or coconut oil)
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare an 8×8-inch baking pan by greasing it lightly and lining it with parchment paper.
  2. In a medium saucepan, combine chopped dates, diced apples, brown sugar (or maple syrup), water (or apple juice), cinnamon, nutmeg, and lemon juice. Cook over medium heat for 8–10 minutes until the mixture thickens.
  3. In a large mixing bowl, mix rolled oats, flour, brown sugar, baking soda, and salt. Stir in melted butter (or coconut oil) and vanilla extract until crumbly.
  4. Press half of the oat mixture into the bottom of the prepared pan. Spread the fruit filling evenly on top and sprinkle the remaining oat mixture over it; gently press down.
  5. Bake for 25–30 minutes until golden brown. Let cool completely before cutting into squares.
