  • 3 ½ cups peeled fresh ginger
  • 4 cups water
  • 5 cups white sugar
  • 1 (3 oz) pouch liquid pectin
  • 5 half pint canning jars with lids and rings

Instructions

  1. Cut the ginger in half; cube one half and shred the other.
  2. In a pot, combine ginger with water and simmer for 1 hour and 15 minutes. Reserve ½ cup of the liquid after draining.
  3. Chill the cooked ginger in the fridge for 4 hours.
  4. Mix chilled ginger, reserved water, and sugar in a large pot; boil for 1 minute.
  5. Stir in the pectin and simmer for an additional 7 minutes while skimming foam.
  6. Sterilize jars by placing them in boiling water before filling.
  7. Fill jars with the ginger mixture, leaving about ¼ inch space at the top; remove air bubbles.
  8. Process filled jars in boiling water for 15 minutes to seal properly.
  9. Cool completely before storing in a cool dark place.
