  • 1 tablespoon Minced fresh chives
  • 1 cup Baby portobello mushrooms, sliced
  • 1/2 stalk Celery, chopped
  • 1 cup Chopped fresh shiitake mushrooms
  • 3 teaspoons Beef bouillon granules
  • 2 teaspoons Chicken stock
  • 2 quarts Water

Instructions

  1. Prepare the Vegetables: Clean and chop all vegetables including dicing the carrot, onion, celery, and mincing the ginger and garlic. Slice baby portobello mushrooms.
  2. Cook the Soup Base: In a large saucepan, combine all chopped vegetables with chicken stock, beef bouillon granules, and water. Bring to a boil over high heat. Cover, reduce heat to medium, and simmer for about 45 minutes.
  3. Blend if Desired: For a smoother texture, use an immersion blender to blend until smooth; this step is optional.
