  • ¼ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • ½ cup vegetable oil
  • ½ cup hot coffee
  • 2 cups shredded phyllo dough (kataifi)
  • 2 tablespoons butter
  • 1 cup pistachio cream
  • 4 oz milk chocolate bar
  • ½ cup heavy cream

Instructions

  1. Preheat your oven to 350°F and grease your baking pan.
  2. In a mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the egg, vanilla extract, milk, and vegetable oil; mix until smooth.
  4. Gradually stir in hot coffee until well combined.
  5. Pour batter into the pan and bake for about 25 minutes or until a toothpick comes out clean.
  6. Allow the cake to cool before preparing the kataifi filling by toasting it in butter until golden brown.
  7. Mix toasted kataifi with pistachio cream and spread over the cooled cake.
  8. For the ganache, melt chocolate with heavy cream in the microwave; whisk until smooth and pour over the cake.
