  • 2 large chicken breasts

  • Salt & pepper (to taste)
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1/2 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 3/4 cup chicken broth
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes
  • Fresh chopped parsley (optional)

Instructions

  1. Microwave the cream cheese until soft, then cut it into smaller pieces.
  2. Slice chicken breasts lengthwise into thinner pieces and season with garlic powder, salt, and pepper.
  3. In a skillet over medium-high heat, melt butter with olive oil, add the chicken, and cook for 5-6 minutes per side until golden brown and cooked through (165°F). Transfer to a plate.
  4. Lower the heat to medium and sauté onions in the same skillet until softened (5-7 minutes), then add minced garlic for another 30 seconds.
  5. Stir in chicken broth, cream cheese, Italian seasoning, and crushed red pepper flakes until smooth.
  6. Return the chicken to the skillet to warm through, adjusting sauce consistency with additional broth if necessary. Season to taste before serving.
