  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • ½ teaspoon parsley (for garnish)
  • 1 cup frozen peas (optional)

Instructions

  1. Season chicken breasts with salt, pepper, paprika, and thyme. Dice the onion and mince the garlic.
  2. In a medium saucepan, combine rice with 2 cups of water or chicken broth and a pinch of salt. Bring to a boil, then cover and simmer for 15-18 minutes until fluffy.
  3. Heat olive oil in a large skillet over medium-high heat. Sear seasoned chicken for 4-6 minutes on each side until golden brown; set aside.
  4. In the same skillet, sauté onion until soft; add garlic and cook briefly.
  5. Pour in chicken broth and bring to a simmer. Stir in heavy cream and add optional peas if desired.
  6. Return seared chicken to the skillet, cover, and simmer for 15-20 minutes until cooked through (165°F/74°C).
  7. Serve over rice with creamy sauce spooned generously on top and garnish with parsley.
