  • 1 medium red bell pepper (finely chopped)
  • 23 cloves fresh garlic (finely chopped)
  • 1 teaspoon Italian seasoning
  • Salt and black pepper (to taste)
  • 7 cups low-sodium chicken broth
  • 1 14.5 ounce can petite diced tomatoes
  • 1 ½ cups Ditali pasta or another small pasta (dry)
  • 1 ½ cups fresh spinach (chopped)
  • Freshly grated Parmigiano cheese (for serving)
  • Fresh basil (for garnish)

Instructions

  1. In a large pot over medium-high heat, crumble the Italian sausage and cook until browned; drain excess fat.
  2. Add diced onion, carrots, celery, and bell pepper to the pot; sauté for about 5-7 minutes until softened.
  3. Stir in minced garlic and seasonings; cook for an additional minute.
  4. Return sausage to the pot, add chicken broth and diced tomatoes; bring to a boil then reduce heat to low.
  5. Simmer for about 10–15 minutes to meld flavors.
  6. Stir in pasta; cook until al dente, about 10 minutes.
  7. Add chopped spinach; stir until wilted.
  8. Serve hot, garnished with grated cheese and fresh herbs.
