- 4 cups vegetable broth
- 1 cup small pasta (like ditalini)
- 2 cups baby spinach
- Heat olive oil in a large pot over medium heat until shimmering.
- Sauté diced onion and minced garlic for about 3 minutes until fragrant.
- Add chopped carrots and celery; cook for another 5 minutes until they begin to soften.
