  • 1 cup fresh strawberries, finely chopped
  • ½ cup vegetable oil
  • 3 large eggs
  • 1 cup buttermilk (or milk + vinegar)
  • 2 cups powdered sugar
  • ¼ cup strawberry puree
  • 2–3 tbsp milk (adjust for consistency)
  • ½ tsp vanilla extract
  • Fresh strawberries for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a mixing bowl, combine the cake mix, chopped strawberries, vegetable oil, eggs, and buttermilk; mix until smooth.
  3. Divide the batter between the prepared pans and bake for 30–35 minutes or until a toothpick comes out clean.
  4. Cool completely in pans before transferring to a cooling rack.
  5. To make the glaze, whisk together powdered sugar, strawberry puree, milk, and vanilla until smooth.
  6. Assemble by layering cakes with glaze in between and pour remaining glaze on top; decorate with fresh strawberries.
  7. Allow to set for 20–30 minutes before slicing.
