  • 4 large bell peppers
  • 1 lb lean ground turkey
  • 1 cup canned black beans, drained and rinsed
  • 1 cup corn
  • 2 cups tomato salsa
  • 1 cup cooked brown rice
  • 1 cup shredded cheese
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1/2 tablespoon minced garlic
  • 2 tablespoons taco seasoning
  • Olive oil spray or 2 teaspoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Spray a baking dish with olive oil.
  2. Halve the bell peppers, remove seeds, brush with olive oil, season with salt and pepper, and bake for 15 minutes.
  3. In a skillet, heat olive oil, cook ground turkey until browned. Add onions, garlic, taco seasoning, corn, and black beans; cook briefly.
  4. Stir in salsa and brown rice; simmer for 2 minutes.
  5. Stuff each pepper half with the filling, top with cheese, and bake for another 15 minutes until cheese is melted.
