  • 500 g cooked edamame
  • 1 medium cucumber
  • 3 small ripe mangos
  • 1 medium red onion
  • 1 can black beans (19 oz)
  • 1 can corn (350 mL)
  • Fresh basil
  • Garlic
  • Red apple vinegar
  • Extra virgin olive oil
  • Sea salt
  • Black pepper
  • Fresh lemon or lime juice
  • 1 avocado

Instructions

  1. Rinse the cooked edamame under cold water until cooled.
  2. In a large mixing bowl, combine the edamame, diced cucumber, diced mangos, diced red onion, rinsed black beans, rinsed corn, chopped basil, and grated garlic.
  3. Drizzle with extra virgin olive oil, red apple vinegar, sea salt, black pepper, and fresh lemon or lime juice. Gently toss to combine all ingredients.
  4. Just before serving, top the salad with diced avocado for added creaminess.
