  • 2 tbsp olive oil, divided
  • 1 pound ground chicken
  • 5 cups cabbage, thinly sliced
  • 1 cup carrots, julienned
  • 1 tbsp ginger, minced
  • 3 cloves garlic, minced
  • 2 tbsp coconut aminos or low sodium soy sauce
  • 2 tsp sesame oil
  • 1 tbsp rice apple vinegar
  • 2 tbsp hoisin sauce
  • 2 tsp chili garlic sauce, or more to taste
  • sesame seeds for serving
  • green onions for serving

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add ground chicken and cook for 3-4 minutes until browned. Drain excess grease if necessary and set aside.
  2. In the same skillet, add another tablespoon of olive oil. Sauté cabbage and carrots for 4-5 minutes until tender and slightly golden. Add ginger and garlic; sauté for an additional minute.
  3. Return cooked chicken to the skillet with vegetables. Pour in coconut aminos, sesame oil, rice apple vinegar, hoisin sauce, and chili garlic sauce. Toss everything together to coat evenly.
  4. Serve immediately, garnished with sesame seeds and green onions if desired.
