Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add ground chicken and cook for 3-4 minutes until browned. Drain excess grease if necessary and set aside.
Return cooked chicken to the skillet with vegetables. Pour in coconut aminos, sesame oil, rice apple vinegar, hoisin sauce, and chili garlic sauce. Toss everything together to coat evenly.
Serve immediately, garnished with sesame seeds and green onions if desired.
