  • 1 medium onion (diced)
  • 1/2 red bell pepper (diced)
  • 1 medium potato (diced)
  • 4 cloves garlic (minced)
  • 1 can (28 ounces) crushed tomatoes

  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • Fresh cilantro or parsley (for garnish)

Instructions

  1. Heat the vegetable oil in a skillet over medium heat. Add diced onion, bell pepper, and potato; cook for 4-5 minutes until softened.
  2. Stir in minced garlic and cook for an additional minute before adding crushed tomatoes, salt, pepper, paprika, and cumin. Mix well.
  3. Reduce heat to low, cover the skillet, and let simmer for about 3-4 minutes.
  4. Create small wells in the sauce and carefully crack eggs into each well. Season lightly with salt and pepper.
  5. Cover again and cook on low heat for 5-8 minutes until egg whites are set but yolks remain slightly runny or cooked to your liking.
  6. Serve immediately garnished with fresh herbs and accompanied by toasted bread.
