  • 2 large sweet potatoes

  • 1 large egg
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons olive oil
  • 1/4 cup maple syrup
  • 1 cup chicken stock
  • 1/4 cup butter
  • 1/4 cup heavy cream
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Instructions

  1. In a large mixing bowl, combine ground beef, breadcrumbs, grated onion, minced garlic, smoked paprika, dried sage, egg, apple cider vinegar, salt, and pepper. Mix gently and form into 16 meatballs.
  2. Heat olive oil in a skillet over medium-high heat and brown the meatballs on all sides for about 6 minutes. Transfer to a plate.
  3. Boil peeled and cubed sweet potatoes in salted water until fork-tender (12-15 minutes). Drain and set aside.
  4. In the same skillet, deglaze with apple cider vinegar, then add maple syrup and chicken stock. Return meatballs to the skillet and simmer until cooked through (about 8-10 minutes).
  5. Mash sweet potatoes with butter, heavy cream, cinnamon, nutmeg, and salt until smooth.
  6. Serve meatballs over warm sweet potato mash and drizzle with sauce.
