  • 2 teaspoons vanilla extract

  • 1/2 cup + 2 tablespoons light brown sugar
  • 1/2 cup granulated sugar
  • 1 2/3 cup + 1 tablespoon all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup chopped semi-sweet chocolate or mini chocolate chips

Instructions

  1. In a stainless steel pan over medium heat, brown the butter until amber in color, about 10 minutes. Transfer it to a mixing bowl.
  2. Stir in ground espresso and allow the mixture to cool to room temperature (20-30 minutes).
  3. Whisk in both sugars until fully combined.
  4. Add the egg, egg yolk, and vanilla extract, mixing well.
  5. Gently fold in flour, baking soda, salt, and chocolate until just combined.
  6. Scoop dollops onto a parchment-lined tray and chill in the freezer for at least 3-4 hours (overnight is best).
  7. Preheat oven to 350°F (180°C) and bake chilled cookies for 10-12 minutes until edges are golden but centers remain puffy.
  8. Cool on a wire rack before enjoying.
