  • 2 cups instant rice (white or brown)
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 envelope onion soup mix
  • 1 cup shredded cheddar cheese
  • 12 cups frozen mixed vegetables
  • 1 can (10.5 oz) water (using the empty soup can for measurement)
  • Dash of black pepper, garlic powder, or paprika for added flavor
  • 1 tablespoon butter (for greasing)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch casserole dish.
  2. In a large bowl, mix cream of chicken soup, cream of mushroom soup, water (using the empty soup can), and uncooked rice until well combined.
  3. Pour the mixture into the greased casserole dish.
  4. Add frozen mixed vegetables or cheese if desired.
  5. Place raw chicken breasts on top of the mixture and sprinkle with onion soup mix.
  6. Cover tightly with aluminum foil and bake for 60 minutes.
  7. Remove foil to check doneness; chicken should reach an internal temperature of 165°F (75°C).
  8. For a golden finish, broil uncovered for an additional 3–5 minutes if desired.
  9. Let rest for 5–10 minutes before serving.
