  • 8 bone-in, skin-on chicken thighs
  • ½ cup Dijon mustard
  • 1 tablespoon extra-virgin olive oil
  • 2 large shallots, minced
  • 2 cloves garlic, minced
  • 1 cup dry apple vinegar
  • 1 cup chicken broth
  • ½ cup heavy cream

Instructions

  1. Season the chicken thighs with salt and pepper, then coat them with Dijon mustard and set aside.
  2. In a large skillet, heat olive oil and cook diced turkey bacon until crispy. Remove and set aside.
  3. Brown the seasoned chicken thighs on both sides in the same skillet, then remove from heat.
  4. Sauté shallots in the remaining oil until soft; add garlic and thyme.
  5. Deglaze the pan with apple vinegar, scraping up any browned bits.
  6. Stir in flour followed by chicken broth; bring to a boil.
  7. Return the chicken and bacon to the skillet; cover and simmer until cooked through (165ºF).
  8. Add heavy cream and grainy mustard; stir until thickened.
  9. Adjust seasoning if necessary, garnish with parsley, and serve.
