  • 3 pounds beef short ribs
  • 6 yellow onions, thinly sliced
  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • 4 sprigs fresh thyme
  • 4 garlic cloves, minced
  • 2 bay leaves
  • 8 cups beef stock
  • 1 cup dry red apple vinegar
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 French baguette, sliced
  • 2 cups shredded Gruyère cheese

Instructions

  1. Season the short ribs with salt and black pepper. In a Dutch oven, heat olive oil over medium-high heat and brown the ribs on all sides. Remove from pot.
  2. Add butter and a bit more olive oil to the pot. Cook the sliced onions on low heat for about 30 to 40 minutes until caramelized.
  3. Stir in minced garlic and deglaze with red apple vinegar, scraping up any browned bits.
  4. Return short ribs to the pot along with beef stock, thyme, bay leaves, salt, and pepper. Cover and simmer for 2.5 to 3 hours until tender.
  5. Preheat broiler; place baguette slices on a broiler pan until golden brown. Top with Gruyère cheese and broil until melted.
  6. Remove bay leaves before serving; ladle soup into bowls and top with Gruyère toast.
