  • 1 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 2 large eggs
  • 4 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup whole milk
  • 3 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped parsley
  • Pinch of salt

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. In a mixing bowl, combine ground chicken, grated Parmesan, panko breadcrumbs, eggs, minced garlic, seasonings (garlic powder, onion powder, dried basil, dried parsley), salt, black pepper, and whole milk. Mix until just combined.
  3. Shape the mixture into a loaf on the prepared baking sheet or press evenly into the greased loaf pan.
  4. Bake for 40–45 minutes or until the internal temperature reaches 165°F (74°C).
  5. For the glaze: Melt butter in a saucepan over medium heat; add minced garlic and sauté until fragrant. Stir in additional Parmesan cheese and chopped parsley until slightly thickened.
  6. Brush the meatloaf with glaze and bake for an additional 5–7 minutes.
  7. Let it rest for 5 minutes before slicing.
