  • 2 Boneless Skinless Chicken Thighs
  • 2 Garlic Cloves
  • 0.5 Red Onion
  • 15g Fresh Ginger
  • 1 Lime
  • 1 Red Chilli
  • 25g Fresh Coriander
  • 25g Fresh Mint
  • 1 tbsp Curry Powder
  • 250g Microwave Rice
  • 350ml Water
  • Olive Oil
  • Salt
  • Black Pepper

Instructions

  1. Marinate chicken in grated garlic, lime juice, and salt for at least 30 minutes.
  2. Slice remaining garlic, ginger into matchsticks, and red chilli.
  3. Cook marinated chicken in olive oil over medium heat until charred (10-15 mins); rest on a plate.
  4. In the same pan, sauté ginger, garlic, and chilli for 3 minutes; add curry powder and cook for another minute.
  5. Pour in water to simmer for about 5 minutes; finish with lime juice and seasoning.
  6. Prepare herb salad by mixing coriander and mint with sliced red onion.
  7. Reheat rice as per package instructions; assemble by dividing rice into bowls, topping with broth, sliced chicken, and herb salad.
