  • 2 large eggs + 1 yolk
  • 2 cups bread flour
  • 2 cups all-purpose flour
  • 8 oz cream cheese (room temperature)
  • 1 cup powdered sugar
  • 1 cup granulated sugar (for coating)
  • Neutral frying oil (such as canola or vegetable)

Instructions

  1. Combine warmed milk, 1 teaspoon sugar, and yeast in a bowl; let bloom for about 10 minutes.
  2. In a stand mixer bowl, mix the yeast mixture with melted butter, eggs, vanilla, flours, dry milk powder, and salt until a shaggy dough forms.
  3. Knead on medium speed for about 20 minutes until elastic.
  4. Form into a ball, place in an oiled bowl, cover, and refrigerate overnight.
  5. Roll out dough to ½ inch thickness; cut into donuts using a cookie cutter.
  6. Proof donuts on parchment paper for about 45 minutes until doubled in size.
  7. Mix cream cheese, powdered sugar, heavy cream, and spices until fluffy; transfer to a piping bag.
  8. Heat oil to 360ºF – 375ºF; fry each donut for about 90 seconds per side until golden brown.
  9. Drain excess oil on paper towels and roll in cinnamon sugar while warm; fill with cheesecake filling.
