  • 1 1/2 teaspoons instant espresso
  • 2 large egg whites
  • 5 tablespoons white sugar
  • 3 large egg yolks
  • 3 large whole eggs
  • 7/8 cup chilled heavy cream
  • 3 tablespoons confectioners’ sugar
  • 3/4 teaspoon vanilla extract
  • 1/2 cup chilled mascarpone cheese
  • Cocoa powder

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix flour and espresso. Set aside.
  3. Beat egg whites until soft peaks form, gradually adding 5 tablespoons sugar until stiff peaks form.
  4. In another bowl, whisk egg yolks, whole eggs, and 3 tablespoons sugar until light and fluffy.
  5. Gently fold the flour mixture into the egg yolk mixture, then carefully combine with the egg whites.
  6. Pour batter onto the baking sheet, spreading evenly. Bake for about 8 minutes until lightly golden.
  7. Cool slightly before rolling up the cake with parchment paper inside; let cool completely in this position.
  8. Whip heavy cream with confectioners’ sugar and vanilla until stiff peaks form; fold in mascarpone gently.
  9. Unroll cooled cake, spread cream filling over it, then roll it back up tightly without parchment paper.
  10. Dust with cocoa powder before serving.
