  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • Salt & pepper
  • 2 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 cup Greek yogurt
  • 1 cucumber, grated and drained
  • 1 clove garlic, minced
  • 1 tsp lemon juice
  • 1 tsp fresh dill, chopped
  • Salt & pepper

Instructions

  1. Prepare the Tzatziki: In a mixing bowl, combine Greek yogurt, grated cucumber (drained), minced garlic, lemon juice, fresh dill, and salt and pepper to taste. Chill until ready to serve.
  2. Cook the Chicken: Rub chicken breasts with olive oil, smoked paprika, salt, pepper, and garlic powder. Grill or skillet-cook over medium heat for about 6-7 minutes per side until fully cooked. Slice into strips.
  3. Assemble: Layer chopped romaine lettuce in bowls and top with sliced cucumber, cherry tomatoes, red onion, and grilled chicken strips. Finish with a generous scoop of tzatziki.
