  • 3 cups cooked rotini or penne pasta
  • 1 ½ cups cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red bell pepper, diced
  • ½ cup red onion, thinly sliced
  • ¾ cup kalamata olives, sliced
  • 1 cup crumbled feta cheese
  • ¼ cup fresh parsley, chopped
  • ¼ cup olive oil
  • 2 tablespoons red apple vinegar
  • Juice of half a lemon

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. In a small bowl, whisk together olive oil, vinegar, lemon juice, oregano, garlic powder, salt, and pepper.
  3. In a large mixing bowl, combine the cooled pasta with tomatoes, cucumber, bell pepper, onion, olives, and feta.
  4. Pour the dressing over the mixture and toss gently until everything is well coated.
  5. Garnish with parsley and chill for at least 30 minutes before serving.
