  • 18 ounces green enchilada sauce
  • 3 cups rotisserie chicken (or leftover cooked chicken)
  • 8 ounces cream cheese (room temperature)
  • 4 ounces canned green chilis
  • 3 cups cheddar cheese (shredded)
  • 8 large flour tortillas
  • Optional toppings: sour cream, salsa, chopped tomatoes, sliced avocado

Instructions

  1. Preheat your oven to 375°F.
  2. Lightly spray a 9" x 13" baking dish with non-stick spray and spread about 1 cup of green enchilada sauce on the bottom.
  3. In a medium bowl, combine rotisserie chicken, cream cheese, canned green chilis, and 2 cups of shredded cheddar cheese; mix until well combined.
  4. Fill each tortilla with about 1/2 cup of the chicken mixture, roll tightly, and place seam side down in the baking dish.
  5. Pour remaining green enchilada sauce over the tortillas and top with the remaining shredded cheddar cheese.
  6. Bake uncovered for approximately 30 minutes or until heated through and cheese is golden brown.
  7. Serve with your choice of toppings.
