  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 small onion, thinly sliced
  • 1 medium bell pepper, sliced
  • 1 medium zucchini, sliced into half-moons
  • 1 cup broccoli florets
  • 1 medium carrot, julienned or sliced thin
  • ½ cup snap peas
  • ½ cup mushrooms, sliced
  • Salt and black pepper, to taste
  • 1 tsp lemon juice (optional)
  • 1 tsp balsamic vinegar or soy sauce (optional)

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
  2. Add 2 minced garlic cloves and 1 thinly sliced onion, cooking for about 2 minutes until fragrant.
  3. Toss in 1 sliced bell pepper, 1 sliced zucchini, 1 cup of broccoli florets, 1 julienned carrot, ½ cup snap peas, and ½ cup sliced mushrooms. Season with salt and black pepper to taste.
  4. Stir-fry all the vegetables for 8 to 10 minutes until they are tender-crisp.
  5. Remove from heat and drizzle with lemon juice and balsamic vinegar or soy sauce if desired.
