  • Small baby potatoes
  • Garlic powder
  • Paprika
  • Fresh chopped parsley
  • Sour cream or thick Greek yogurt
  • Finely chopped chives
  • Lemon zest
  • Paprika dusting

Instructions

  1. Marinate the chicken by combining boneless chicken breasts, chopped parsley, thyme, rosemary, crushed garlic, olive oil, lemon juice, salt, and pepper in a bowl. Let it sit for 15 minutes.
  2. Preheat your oven to 400°F (200°C). Wash and halve the baby potatoes, then toss them with olive oil, garlic powder, paprika, salt, and black pepper.
  3. Spread the potatoes on a baking sheet and roast for 25-30 minutes until golden brown.
  4. While the potatoes are roasting, grill the marinated chicken on medium heat for 6-7 minutes per side until fully cooked (165°F/75°C).
  5. Prepare the creamy dip by mixing sour cream (or yogurt), chopped chives, minced garlic, lemon zest, paprika dusting, salt, and pepper until smooth.
