  • 4 skin-on chicken breasts or 6 bone-in, skin-on thighs
  • 1 tbsp kosher salt
  • 1 tsp black pepper
  • 3 tbsp salted butter
  • 1 cup brown mushrooms
  • 3 shallots
  • 2 stalks celery
  • 3 cloves garlic
  • 1 tbsp sage
  • 2 tsp parsley
  • 1/4 cup all-purpose flour
  • 1/2 cup white grape juice
  • 2 cups chicken stock
  • 1 lb baby yellow potatoes

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Pat chicken dry; season with salt and pepper.
  3. In a Dutch oven, melt butter over medium-high heat; brown chicken on both sides for about 3-5 minutes. Remove and set aside.
  4. In the same pot, add mushrooms, shallots, celery, and garlic; sauté until softened.
  5. Stir in sage, parsley, and remaining seasoning; sprinkle flour over vegetables.
  6. Deglaze with white grape juice; gradually stir in chicken stock until slightly thickened.
  7. Add halved potatoes to the sauce; nestle browned chicken pieces on top.
  8. Roast uncovered for about 40–45 minutes or until cooked through.
  9. Let rest for at least 10 minutes before serving.
