  • 1/2 cup creamy peanut butter (for filling)
  • 1 1/2 cups powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, baking soda, and salt. Set aside.
  3. In another bowl, cream together softened butter and brown sugar until fluffy. Add creamy peanut butter and mix until smooth.
  4. Beat in the egg until fully incorporated.
  5. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  6. Roll tablespoon-sized portions into balls, flatten with a fork on a parchment-lined baking sheet.
  7. Bake for about 10 minutes or until lightly golden around the edges.
  8. For the filling: Combine softened butter and peanut butter in a mixing bowl; gradually add powdered sugar while mixing. Add milk and vanilla extract; beat until smooth.
  9. Once cookies are cool, spread or pipe filling onto half of them and top with remaining cookies to form sandwiches.
