  • 1/2 cup sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • 3 cups shredded sweetened coconut
  • 15 ounces soft caramels
  • 3 tablespoons whole milk
  • 1/4 teaspoon salt
  • 8 ounces dark chocolate

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together unsalted butter and sugar until light and fluffy. Gradually mix in flour, baking powder, and salt. Then add milk and vanilla extract until dough forms.
  3. Roll out the dough on a floured surface to about 1/4 inch thick. Cut into circles and place them on the baking sheet. Cut smaller circles from each for that classic Samoas shape.
  4. Bake for 12-15 minutes or until golden brown; let cool on a wire rack.
  5. Toast shredded coconut in a skillet over medium heat until lightly browned.
  6. Melt caramels with milk and salt in a saucepan over low heat until smooth.
  7. Spread melted caramel over each cookie, top with toasted coconut, pressing gently.
  8. Melt dark chocolate and dip half of each cookie before setting on parchment paper.
