  • 6 chicken thighs
  • 8 oz turkey strips
  • 2 large peaches, sliced
  • 1 cup chicken broth
  • 1/2 cup honey
  • 1 stick butter
  • Fresh herbs (thyme and basil)
  • 2 tsp sea salt, divided
  • 1 tsp fresh cracked pepper, divided
  • 1 tsp oregano, divided
  • 1 tsp garlic powder
  • 1/2 tsp paprika, divided
  • 1 large shallot
  • 3 cloves garlic, grated or pressed
  • 2 Tbsp extra virgin olive oil

Instructions

  1. Preheat your oven to 350°F (175°C). Season chicken thighs with half the sea salt, pepper, oregano, garlic powder, and paprika.
  2. In a skillet over medium heat, cook turkey strips for about 3 minutes. Remove from pan and set aside.
  3. Sear seasoned chicken thighs in the same skillet for 1-2 minutes per side until browned. Remove from heat.
  4. Sauté chopped shallots in olive oil for about 2 minutes, then add grated garlic and cook until fragrant.
  5. Deglaze the skillet with chicken broth and let it simmer for three minutes.
  6. Stir in butter and honey until melted; return chicken to the pan along with thyme sprigs.
  7. Cover and bake in the oven for 15 minutes.
  8. Add sliced peaches on top of the chicken; spoon more sauce over everything and broil for an additional 3-5 minutes until peaches soften slightly.
  9. Serve hot with fresh basil and thyme for garnish.
