  • 4 cups confectioner’s sugar

Instructions

  1. Make the pistachio paste by blending the shelled pistachios in a food processor until finely ground. Add heavy cream and blend until a thick paste forms.
  2. In a mixing bowl, beat softened unsalted butter on medium-high speed for 7 to 9 minutes until fluffy and pale.
  3. Mix in the pistachio paste and vanilla extract until well combined.
  4. Gradually add confectioner’s sugar while mixing on low speed, then beat on high for 3 to 4 minutes until light and fluffy. Add green food coloring if desired.
  5. If needed, chill the frosting for 30 minutes before re-beating to achieve desired fluffiness.
