  • 2 1/4 cups mashed overripe bananas
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp nutmeg
  • 1/2 cup butter
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 2 eggs, beaten
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Instructions

  1. Mash the bananas until you have 2 1/4 cups.
  2. In a bowl, mix together flour, salt, baking soda, and nutmeg.
  3. In another bowl, cream butter with white and brown sugars, then mix in cinnamon, eggs, vanilla extract, and mashed bananas.
  4. Combine the wet mixture with dry ingredients gently until just combined.
  5. Pour the batter into a greased pan and prepare your Instant Pot with one cup of water and a trivet.
  6. Cover the pan with foil and place it in the Instant Pot. Cook on manual for 50 minutes with a quick release afterward.
  7. Let it cool for five minutes before transferring to a rack to cool completely.
