  • 2 small onions (chopped)
  • 2 carrots (diced)
  • 2 stalks celery (diced)
  • 2 zucchini (diced)
  • 1 bell pepper (cored and diced)
  • 1 can tomato juice (19 ounces)
  • 1 can diced tomatoes (28 ounces)
  • 4 cups vegetable broth
  • ½ cup small pasta (shells, elbows, or ditalini)
  • 1 can cannellini or kidney beans (rinsed and drained)
  • 2 cups baby spinach
  • Fresh parsley or basil for garnishing

Instructions

  1. Dice all vegetables: onions, carrots, celery, zucchini, and bell pepper.
  2. In the Instant Pot, combine diced veggies with tomato juice, diced tomatoes, vegetable broth, pasta, dry parsley, oregano, and bay leaf.
  3. Seal the lid and set to Manual mode at high pressure for 10 minutes. It will take about 10-15 minutes to come to pressure.
  4. After cooking, perform a quick release of pressure and carefully open the lid.
  5. Taste the soup and adjust seasoning with salt and pepper as needed.
  6. Stir in the rinsed beans and spinach; close the lid again for an additional 5 minutes to warm through.
  7. Serve hot garnished with fresh herbs.
