  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 3 medium apples, peeled and diced
  • ⅓ cup brown sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • ¾ cup all-purpose flour
  • ½ cup brown sugar
  • ½ teaspoon cinnamon
  • ½ cup cold unsalted butter, cubed

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press into the bottom of a springform pan.
  2. Bake crust for about 10 minutes until slightly golden. Let cool.
  3. Beat softened cream cheese until smooth; add granulated sugar and mix well.
  4. Add eggs one at a time on low speed; fold in sour cream gently.
  5. Pour cheesecake filling over the cooled crust and smooth the top.
  6. In a saucepan over medium heat, combine diced apples with brown sugar, cinnamon, cornstarch mixed with water, and lemon juice; cook until tender.
  7. Spoon the apple mixture over the cheesecake layer.
  8. For the crumble topping, mix flour, brown sugar, cinnamon, and cubed butter; sprinkle over apples.
  9. Bake for 55-65 minutes until set in center; cool completely before refrigerating for at least four hours.
