  • 5 cups water or stock
  • 1 lb cubed beef (or chicken, lamb, or turkey)
  • 8 oz Japanese curry roux
  • 1 red apple (Fuji or Honeycrisp)
  • 8 cups medium grain white rice

Instructions

  1. Chop potatoes, carrots, and onions into large chunks; mince garlic and grate the apple.
  2. Soak potato chunks in warm water for 15 minutes.
  3. Season beef cubes with salt; let rest.
  4. Sear beef in a pot over medium heat until browned; remove from pot.
  5. Sauté onions in butter until caramelized, then add garlic and cook briefly.
  6. Stir in potatoes and carrots; return seared beef to the pot.
  7. Add water and optional ingredients like grated apple; stir well.
  8. Simmer covered for about 15 minutes; skim off any scum.
  9. Check potato doneness, then add curry roux slowly until dissolved.
  10. Simmer uncovered for another 15 minutes until thickened.
  11. Serve hot over bowls of rice.
