  • 2½ cups all-purpose flour
  • 1 cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • Powdered sugar for dusting
  • 1 Tbsp lemon zest (from about 2 lemons)
  • Pinch (â…› tsp) salt
  • ½ cup (112 g) unsalted butter, cold and cubed
  • ½ tsp baking powder
  • ½ tsp fine salt

Instructions

  1. To make the lemon curd, whisk together lemon juice, zest, egg yolks, sugar, and salt in a small saucepan over medium-low heat until thickened (20–25 minutes). Stir in cold butter until smooth and let cool.
  2. For the cookie dough, mix flour, baking powder, and salt in one bowl. In another bowl, cream softened butter and sugar until fluffy. Add egg yolk, vanilla extract, and lemon zest; mix well. Gradually incorporate dry ingredients and chill dough for 1 hour.
  3. Preheat oven to 350°F (175°C). Scoop chilled dough into balls and place on parchment-lined baking sheets. Press a well into each ball and bake for about 10 minutes.
  4. While warm, fill each cookie center with lemon curd and dust with powdered sugar if desired.
