  • 1 cup dry green or brown lentils
  • 4 cups vegetable broth
  • 2 carrots, sliced
  • 1 onion, diced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 large potatoes, peeled and chopped
  • 4 tbsp butter
  • milk to taste
  • salt and pepper

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery; cook until soft.
  2. Stir in minced garlic and sauté for one minute.
  3. Add lentils, diced tomatoes (with juice), vegetable broth, thyme, and bay leaf; mix well.
  4. Bring to a boil, then reduce to low heat and simmer for 25–30 minutes until lentils are tender.
  5. Meanwhile, boil salted water in another pot. Add chopped potatoes and cook until tender.
  6. Drain potatoes and mash with butter, milk (to taste), salt, and pepper until creamy.
