  • 2 lbs lean ground beef
  • 1 cup ketchup
  • 30 Ritz crackers
  • 3 cups macaroni noodles
  • 10.5 oz condensed cheddar cheese soup
  • 4 cups shredded mozzarella and cheddar cheese blend
  • 2 eggs
  • 2 cups milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix ketchup with barbecue sauce; set aside. In a large bowl, combine ground beef, crushed Ritz crackers, onion soup mix, eggs, and half the ketchup mixture. Mix until combined.
  3. Press the meat mixture into a greased baking dish and top with remaining ketchup mixture. Bake for 30 minutes.
  4. Cook macaroni according to package directions; drain. In a bowl, whisk milk with cheese soup, salt, pepper, garlic powder, and onion powder until smooth. Stir in cooked macaroni and shredded cheese.
  5. Pour macaroni mixture over the baked meatloaf and top with additional cheese; bake for another 17-20 minutes until bubbly.
