  • 1/2 cup gluten-free flour
  • 2 Tablespoons extra virgin olive oil
  • 1 cup chicken broth
  • 1/4 cup chopped pecans
  • 3 Tablespoons pure maple syrup
  • 1 Tablespoon dijon mustard
  • 2 teaspoons gluten-free reduced-sodium tamari
  • 1 Tablespoon apple cider vinegar
  • 1/4 teaspoon dried rosemary (crushed)

Instructions

  1. Season gluten-free flour with salt and pepper in a shallow dish. Dredge each chicken thigh in the mixture and set aside.
  2. Heat olive oil in a cast iron skillet over medium-high heat. Sear the chicken thighs until golden brown on both sides (about 2 minutes per side). Remove from skillet.

  4. Return chicken to the skillet, cover loosely with foil, and simmer for about 10 minutes until cooked through.
